Could you please connect the disk to another SATA port and test it again?
Okay so I've finally got some results. I ran into a strange quirk when I found it booted fine again on the same kernel! And then another issue with broken internet.

I thought it was the kernel, but I tested known working kernels and they still failed. And my Xenial setup still worked fine. Turns out I for stuck on a DNSSEC missing key issue. Which is also affecting modern distros since October 11. Around RC5 of 7.3 kernel I was seeing issues. But it looks like that's when the DNS was failing.

So I moved the SSD to another SATA port. Then tested Mint with 7.3.0-rc6 kernel. On fresh boot I could still see lots of SATA errors but the system could boot. I then rebooted to MATE with same kernel and it booted fine without any SATA errors. Makes me wonder if the code is missing some initialising for setting up the SATA link. Which happens to be setup after a reboot. Seems like a long shot but I have seen different behaviour between fresh boot and reboot in the past, though I can only think of an issue from my A1/XE, so not my X1000.
