I have noticed Void, too, and have been thinking whether it could be used with X5000....
The deposit for PPC64 BE (https://auto.voidlinux-ppc.org/current/be/) seems to have even Firefox 79, and merely that would be worth the effort! There are also some other FF versions (ESR) available.

I did get the installer ramdisk to start on my X1000, but I could never get it to find the compressed filesystem, so kept getting stuck in a boot shell.
If time permits in the future I'll have another look, looks like the 64be version will run on the X1000, we may need to stick to 32bit on the X5000 though.

The documentation of Void indeed states that e5500 CPUs do not work with the 64bit version due to altivec.
The deposit of the 32bit version did not seem to have FF 79, so Void would be much more useful for X1000 users.If time permits in the future I'll have another look, looks like the 64be version will run on the X1000, we may need to stick to 32bit on the X5000 though.
BTW, there also seems to be a recent PPC version of Linux Mint:
