There are two device drivers written for the X-5000 and A-1222 machines. The first one released was written by a third party, not by Hyperion, and it uses a fixed MAC address.
The Hyperion device driver correctly reads the MAC addresses from the board and uses them properly.

I've never heard it before, so maybe it was only mentioned in the Linux part of the world.
Now, the next question: how the hell do we program the EEPROM with the missing values?
I do wish we had some proper hardware documentation...
The mac command has several options, one of them is supposed to save data to the eeprom. (But it didn't work when I tried it)
The other may be more up your street Tony, a quick check of the Cyrus-TRM shows that the eeprom is attached to I2C bus 0. Linux has tools for writing to I2C, but I don't want to mess with it as it contains other information too. (Erreta and build data)
Talk to Matthew, he should know more.
